Given free rein in a kitchen in Colorado (well, any kitchen – anywhere!) to create a special dinner for special folks is a dream for many a chef. I certainly considered myself very privileged when Ming and Garry (owners extraordinaire of the beautiful Canyon of the Ancient Guest Ranch) asked me to cater their Anniversary Dinner and allowed me to prepare my favorite dishes. 

"These are a few of my favorite things..." – as Julie Andrews sings in The Sound of Music – and I would like to share the recipes with you. We'll start with marinated salmon (gravlax) and mustard sauce (sounds better in Swedish). It was definitely one of the culinary hits of the evening! Who knew? Most Americans aren't really fond of "raw fish" but "gravlax" seemed to be to their liking. Click on the recipe section to find this delectable Swedish dish.
